Hi and congratulations on making it to the last Friday of January. We in the NYC area are barely surfacing from all the snow dumped on us at the beginning of this week. I hope wherever you are, you’re safe and warm and not too worse for wear after the crazy winter we’ve been having in most of the country. February will bring some fun Super Bowl and Valentine’s related recipes, but for this last weekend of January, I’m bringing a few more cozy soups that come together quickly and are comforting for these cold winter days. 

The first is an easy version of one of my favorite Thai dishes—Tom kha gai. Full of warm and spicy flavors. The mushrooms and chicken give it heartiness while the coconut milk and curry flavors are warm and spicy. 

The second is a classic favorite— broccoli cheddar—creamy and delicious with sourdough bread on a cold night. I hope you stay warm and enjoy!
